Winery Domaine Charlopin-Parizot can be found in the heart of Gevrey-Chambertin in Burgundy. In 1977, Philippe took over from his father and has been responsible for the domain ever since. At that time, only 3.5 hectares were in production. Today, the vineyard area has expanded to about 25 hectares. The planting is spread over the regions of Côte de Nuits, Côte de Beaune, and Chablis. Out of all the appellations, Clos de Vougeot, Vosne Romanée, Chambertin and Chambolle-Musigny are the most important.

Philippe quickly became known for his modern approach and for parting with some of the traditions. For example, he chose to carry out the fermentation in large stainless-steel tanks instead of in traditional oak barrels. The fermentation is started by using native yeasts. When the fermentation process is completed, the wine is pumped into French barriques, where the wine ages for another 18 months. Completely new barrels are used for the Grand Cru wines. For the village wines, the proportion of new wood is not more than 50%. When the barrel ageing is complete, the wines are lightly filtered and bottled.

Initially, not everyone agreed with Philippe’s way of working. His vinification methods deviated from the standard and were said not to be aimed at expressing the terroir. But Philippe quickly proved them wrong. Today, Philippe is regarded as a highly talented winemaker and his wines are among the best in the region. The best vintages of Domaine Charlopin-Parizot are: 2003, 2012, 2015 and 2019.
