Tasting Notes by Jim McEwan, head distiller;
Character: Precision and definition.. Light, fresh, clean, smooth and creamy. A single malt this young simply should not be as smooth but this is handcrafted, fully certified organic single malt.
Colour: Soft Yellow/Lemon
Nose: Opens on barley water and lemon juice with a sweet notes of lemon meringues. Fragrant floral blossoms intermingle beautifully with the citrus flavours exciting the taste buds. Also, we find little notes of ester sweet pineapple.
Palate: Malted barley emerges. Crisp and sweet, almost like toasted rye bread, buttery popcorn and the fresh oak bourbon flavours merge into the mix strong and mellow adding structure and weight to the overall experience.
Finish: Organic barley produces a more malty taste, the texture is more viscous and fresh green fruity notes are more pronounced.. The finish is like glycerine and it caresses the palate like swansdown. Oh the purity!
