Daftmill is owned by Francis and Ian Cuthbert. The brothers applied for a distillery license in 2003 and were thrilled to receive it in 2005. Since then, they have been producing about 20,000 liters of whisky each year. This small-scale production allows for meticulous attention to detail, such as running the wort through the wash tun multiple times to achieve a clear liquid. The farm and distillery are managed daily by Francis, who works tirelessly on his land. On the farm, he grows his own barley, as well as potatoes, carrots, and broccoli. Speaking about their operation, Francis said, “For our own living we sell some of our barley to other whisky producers. Who? Edrington Group, so Macallan. But we keep the best barley for ourselves 😉”.

Daftmill is a true grain-to-bottle producer, and everything they do is carefully considered. Daftmill’s style is generally fruity, fresh, and flavorful, and this Single Cask is no exception.

The DAFTMILL 2011 Single Cask Single Malt for the Netherlands is bottled at a cask strength of 58.6%. The angels have enjoyed their share from this cask. Only 136 bottles have been produced, making it a very limited release.

Tasting notes: On the nose, you’ll detect tropical notes, along with a strong presence of wood. The palate reveals flavors of apple, lemon, banana, brown sugar, and a delightful wave of spices. The finish is long, and at cask strength, this whisky lingers even longer than typical Daftmill releases. Once again, a fantastic dram.
