Walker, a licensed chemist, has been at the helm of The GlenAllachie for nearly five years, having previously led an illustrious and extensive career with numerous well-known brands and companies. His enviable experience includes iconic names including: Ballantine's, Deanston, Tobermory, BenRiach, GlenDronach, Glenglassaugh and now of course The GlenAllachie.
To celebrate this extensive experience, a trilogy of bottlings will be released this year. These three editions will be references to important moments in Billy Walker's career. The bottlings will be called Past, Present and Future.
The first part of the Billy Walker Anniversary series is a 16 year old single malt that has been fully matured in Sherry casks. This bottling is therefore the "Past Edition" and refers to Walker's past in the whiskey industry. This was chosen because in the past he has received a lot of praise for the sherry aged whiskeys that he has bottled.
Tasting Notes:
Color: Deep mahogany.
Nose: Waves of walnuts, heather honey and subtle dried fruit, followed by bursts of roasted coffee, orange peel and cinnamon sticks.
Palate: Fig syrup, caramelized muscovado sugar and toasted pine nuts with notes of heather honey, crystallized ginger and dried apricots.
Finish: The long finish goes from sweet to slightly spicy with dark notes and dried fruit.
