In the past 10 years, Taiwanese Kavalan has become a significant name in the world of whiskies. The distillery, opened in 2005 and boasting 1.2 million annual visitors, is also one of the most visited distilleries globally. It is named after the area around Yilan, known in ancient times as Kavalan, home to the Kavalan clan. Thanks to the clear creamy water from the surrounding mountains' springs, Kavalan has managed to create exceptionally smooth, soft, and creamy whiskies.
In Taiwan's hot and humid subtropical climate, cellar temperatures can rise to 42°C, with an angel's share of about 12% per year. To counter this evaporation, Kavalan inaugurated a third cellar in 2022, equipped with a state-of-the-art ventilation system. The Kavalan 9YO Single Cask Port matured in one of the two old cellars. This whisky transcends its natural boundaries, brilliantly demonstrating that maturation in port casks perfectly complements Kavalan.
Official Tasting Notes:
- Nose: Sweet and deep. Licorice, vanilla, cherries, blackberries, and a hint of smoke.
- Palate: Lively and tense. Wine-like with black grape, licorice, salted caramel, and toffee.
- Finish: Long and elegant. Cherry, mango, persimmon, guava, lychee, and caramel.
