It's time for two fantastic rums! A 15-year-old Foursquare rum from Barbados, consisting of a blend of two rums that have each aged separately for 15 years. A white 'High Ester Rum' under the name Habitation Velier, also from the Foursquare distillery in Barbados.

Foursquare Barbados Rum
Foursquare's single blended rums are unique due to their very original production approach. A rum distillate from both a pot still and a column still are combined. The two distillates each acquire special characteristics, with the first being very aromatic and the second stronger and more fruit-focused.

Foursquare Absolutio is produced using this original method of distillation and aging for which Foursquare is known. Two separate distillates are aged separately before being blended. The first batch is a mix of pot still and column distilled rum, aged in ex-bourbon barrels for 15 years. The second batch, distilled using the same technique, is aged for 10 years in ex-bourbon barrels followed by 5 years in ex-port barrels. All aging takes place in the tropical climate of Barbados.

Tasting Notes
- Nose: Intensely aromatic and exotic. Mango, banana, roasted nuts, coconut, and cane sugar.
- Palate: Rich and luscious. Citrus, nutmeg, hyacinth, caramel, cedarwood, and bitter chocolate.
- Finish: Long and precise. Candied apricot, syrup, slate, cocoa, pepper, and a hint of ginger.

Habitation Velier Rum
Habitation Velier is a project with exclusive bottlings made through partnerships with some of the world's best rum producers. The range focuses on 100% pot still rum, entirely aged in the tropics with no sugar added and bottled at high or full proof. Only a few rums from the selection are re-released upon popular request, like this white Foursquare.

This Habitation Velier rum is a mix of Foursquare rums from Barbados, each distilled in the double retort pot still. Fermented from sugarcane molasses and the juice of freshly crushed sugarcane. The fermentation of the molasses is carried out by adding cultured yeast for about 72 hours, while the fermentation of the fresh sugarcane juice takes place over several weeks entirely based on the natural yeast present in the substrate.

This method of distillation, the long fermentation, and the use of both sugarcane molasses and fresh sugarcane juice result in many aromatic esters, making the rum considered a 'High Ester Rum'.

Tasting Notes
- Nose: Deeply aromatic. Vanilla, toffee, grassy undertones, cinnamon, black pepper, and varnish.
- Palate: Bold and dynamic. Sugarcane juice, citrus, gasoline, and a touch of burnt sugar.
- Finish: Long and intense. Bitter cocoa, cane sugar, spices, and honey.
