Holyrood was created with the intention of demonstrating that there is an alternative way to produce whisky and to introduce a different type of whisky brand to the market. We actively explore new recipes using heritage malts, specialty malts, and various yeast strains in our production process. These heritage and specialty malts, along with the yeasts, are the same raw materials used in brewing different worts, which give those worts such a wide range of flavors.
Official Tasting Notes:
- Nose: Lemon zest, chestnut peel, hints of peppermint, and light hickory smoke.
- Palate: Waffle cookies, dark chocolate mousse, with notes of earthy Highland peat smoke.
- Finish: Lightly stewed pears, with a well-rounded, crisp finish.
