Aged in American oak, the 2016 Cabernet Sauvignon Bin 707 stands out for its bold aromas of vanilla, tobacco and cassis. This year, it's close to 40% each from Coonawarra and McLaren Vale, with smaller proportions from Barossa Valley and the Adelaide Hills. It's full-bodied and rich, with a velvety mouthfeel, great intensity and super length. Yes, it's embryonic, but it's not unapproachable, much like any other high-quality New World Cabernet these days, with the ability to age for two decades or more.

The scents of Indian ink and vivid, new American oak take center stage, followed by redcurrant, blackcurrant and meaty aromas, as well as a sanguine, iodine edge. The palate confirms the sense that this needs a good rest. Deep and dense, the attractively chewy tannins are draped in rich, ripe blackberry and blackcurrant flavors. This is a vibrant wine, with significant tannin layering that needs to rest a little. Coonawarra, McLaren Vale, Barossa Valley, Adelaide Hills fruit sourcing. 20 months in new American-oak hogsheads.
