The grapes are selectively handpicked in the early morning hours and delivered to the winery in the crisp, pre-dawn air for careful sorting. After fully destemming the fruit, the fermentation process takes place in open-top stainless steel tanks, using only 100% natural yeasts, and employing twice daily punchdowns to extract color, tannins, and flavors. Upon completion, the wine is transferred to 55% new French oak barrels where malolactic fermentation occurred, followed by an 11-month maturation period in the cellar. The unfined and unfiltered Pinot Noir is bottled around a year after the harvest.
A semi-opaque, deep ruby with a purple hint, the 2021 Pinot Noir Cuvee Number Eight takes on a darker profile, with wet stone, blackberry, pepper, and grilled rosemary. Full-bodied, it brings more structure, with ripe tannins, iron-rich earth, and kirsch as well as fresh lift on the finish. Drink 2025-2035.
