Cold maceration 6–7 days, then 18 days on skins in open fermenters. 18 months in barrel, 15% new. Cask sample.
Mid cherry red. Dark-fruited, lightly oak-spiced and savoury with an attractive edge of dusty crushed rocks. Fine, dry texture, that stoniness there to complement the dark fruit. Elegant and fine-boned, still a little subdued but long. (JH)
There is enough menthol and wood influence to mention setting off the elegant, pure and airy aromas of various red berries, earth and a lovely range of spice elements. The round and caressing larger-scaled flavors flash good power on the serious, sappy and moderately austere finish that leaves zero doubt that it's built to age. This is a classic Bressandes of refinement and punch that should be left alone for at least a decade.
