The 2016 Chablis comes from 4.5 hectares of vines planted between 1988 and 1990 and is fermented entirely in stainless steel. It has a fresh apple blossom and flinty bouquet that gradually unfurls in the glass, although I would have liked a little more intensity to come through. The palate is clean and precise on the entry with commendable weight for a village cru, with a smear of clear honey and lemongrass toward the satisfying finish. This is worth seeking out.
