I tasted the bottled version of the Chardonnay 2016 Les Chamois du Paradis that I had tasted from barrel previously, and the wine, which feels very gastronomic, has some oxidative and floral notes combined and feels a little funkier than the rest of bottles I tasted next to it this time. It has moderate alcohol and high acidity, which make it vibrant and refreshing, citrusy (it developed some tangerine peel notes), with a feeling of some skin contact, spicy and a little yeasty and with a salty twist on the finish. It's super tasty, with echoes of seashells, a little à la Chablis, classy and balanced but with good concentration. It comes from a vineyard planted in 1963 on Bajocien soils and was bottled after spending four years in topped-up used and neutral oak demi-muids.
