A blend of Chardonnay, Sauvignon Blanc, Pinot Grigio, Riesling Italico, fermented separately and aged together. Fermented in Georgian qvevri buried underground with ambient yeast and no temperature control. The wine is drawn off and pressed and then put back into clean qvevri for another 5 months at least. Five years in large old oak. Unfined and unfiltered. Some botrytis in 2006.
A little more reticent on the nose than the 2007 – hay and a touch of ginger and barley sugar. On the palate, it is as much about texture as flavour. Extremely dense and firm but not heavy in the least. As it opens in the glass, it becomes more spicy and the spice seems to inhere in the texture as well as the flavour, with a touch of quince adding to the ultimate freshness that is driven by the tannins as much as by the acidity.
