The 2000 Millésime Brut Légende (a.k.a. Hugh de Payen) is a blend of oak-fermented Chardonnay and Pinot Noir that was disgorged in September 2016 after more than 15 years on the lees. Golden in color and with lovely maturity on the nose (brioche, mushrooms, gray bread, carrots), this is a lean, fresh, linear and well-structured aperitif Champagne with a bone-dry finish (dosage: 3.3 grams per liter). The bottle I tasted in February 2018 in Zurich was more exciting than the one I had in May 2018.
