The 2005 Millésime Brut Cuvée Hugh de Payen has a dark, straw-golden color and displays a deep, clear, intense and concentrated nose with ripe, dried and matured fruit aromas along with some botrytis flavors. Full-bodied, rich, round and elegant as well as pure, dry and really fresh on the palate, with mouth-filling fruit and a clear, dry and persistent finish, the 2005 reveals nice finesse and complexity. It is a classy food Champagne and can possibly age for another decade. Disgorged in 2010, with a dosage of six grams per liter. Tasted July 2017.
