The king of the cellar chez Cornin is the 2021 Pouilly-Fuissé 1er Cru Les Chevrières, a lovely wine redolent of stone fruits, orange zest, pear, musky spices, flowers and honey, followed by a medium to full-bodied, deep and satiny palate that's lively, seamless and complete. Spared by both frost and hail, it's a great success.
The 2021 Pouilly-Fuissé Les Chevrières 1er Cru escaped the hail and the frost, grown on shallow soils that hit the limestone bedrock after just 15-20cm. It is aged entirely in Stockinger demi-muids. It sports a clever reduction on the nose, the most detailed of Cornin's crus, demonstrating the most tension. The palate is very well balanced with a silver bead of acidity and tensile from start to finish. There's more mineralité compared to the Les Plessys, with a harmonious and persistent finish. Wonderful.
